Quick Meals for the Holiday Rush
Healthy Holiday Chili
1 pound lean ground turkey
1 onion, chopped
3 cloves garlic, minced
2 to 3 tablespoons chili powder
1 teaspoon salt
Pepper, to taste
2 cups chopped fresh or canned tomatoes
3 cups low-sodium beef broth
1 can (16 ounces) kidney beans, drained
Toppings: fat-free sour cream, diced tomatoes, black olives, shredded lettuce, chopped onions
Cook the ground turkey until it is no longer pink, breaking it into chunks. Add the onion and cook about three minutes. Add chili powder, tomatoes, garlic, broth and salt and pepper to taste. Bring to boil, reduce heat and simmer about 30 minutes, stirring occasionally. Add kidney beans and cook five more minutes to heat through.
Serve in a bowl with desired toppings, or ladle with a slotted spoon onto a tostada shell. Serves six.
